The Meat Laboratory, Where Everything Takes Shape
All the preparations take place in our laboratory. There, you might catch a glimpse of us, often frenzied and hard at work, turning your ideas into reality! In our laboratory, after butchering and resting in our refrigerated cells, the meats (which reach us strictly whole) can be processed, starting from the deboning phase with a knife.


Dry Aging: The Aging Process
Dry Aging is the meat curing period necessary to provide the highest quality product.
We dry age the meat in our refrigerated cells with controlled temperature and humidity for a minimum of 35 days, which can be extended upon request of the most passionate customers
This curing process requires patience, time, and dedication. However, it allows you to fully savor an excellent ribeye or T-bone steak in all its tenderness and flavor.
